Remember that song?!?!?
I passed out last night at 8:45 and woke up this morning at 5:30. That’s my kind of Friday night! Wooo party!
Yesterday was pretty perfect. I went to an interview, stood in awkward elevator silence (I always want to start singing or something), sweat my face off at the gym, and lounged by the pool. Oh, and ate tacos. Can’t forget about the tacos.
Let’s start from the beginning, shall we?
Yesterday morning started with a tomato, mozzerella, and egg sandwich
I scrambled one egg with cheese and heated the tomato in the pan until it was warm and gooey. I had blueberries on the side. I’m going to turn into a blueberry. I promise.
I plopped everything on whole wheat toast and called it a day.
I had an interview at 11 so I skipped going to the gym in the morning and read blogs instead.
Post-interview lunch Part One:
A piece of whole wheat toast smeared with PB and Raspberry Creamed Honey. Oh boy! Awesome combo! On the side, I had baked scoops with salsa.
After lunch, I walked to the gym and then walked on the treadmill at a 9- 13 percent incline for 30 minutes. Then, I hopped on the crossramp elliptical for 25 minutes. This workout combined with body pump on Thursday night made it hard to sit down when I got home. At least my booty got a good workout!
Lunch Part Two looked like this:
Cheerios+Blueberries+Cinnamon+Vanilla Almond Milk × 2= a happy Rebecca.
Jess came over to lounge by the pool with me.
I’m ready to punch the pool in the face, obviously.
Sorry to brag, but my complex has a really nice pool. We are pretty lucky.
I brought along the new issue of Shape to read by the pool.
It was a fun and relaxing afternoon.
When we got back, I drank one of these:
Jeff and I made tacos for dinner last night.
I made corn tortilla chips and guacamole to go with dinner.
These are really easy to make. All you need is Corn tortillas, Extra Virgin Olive Oil, and Sea Salt. Simply cut the tortillas into triangles, dip them into the olive oil and sea salt mixture, and bake them in the oven at 425° for around 8 minutes. And TADA-homemade chips!
Guac is also really easy to make. Jess taught me how to make it about a month ago and I’ve been obsessed ever since.
What you’ll need:
- 1 ripe, soft avocado
- ¼ of a tomato, chopped
- Garlic powder
- 1 spoonful of sour cream (I only like to use a little-you don’t need a lot to make the guac creamy)
- Juice from ¼-½ of a lime
What to do:
- Cut the avocado in half lengthwise, remove the pit, and scoop the inside of the avocado into a bowl
- Add chopped tomato, a shake of garlic powder, and a spoonful of sour cream.
- Mix all together and squeeze lime juice into the mix for flavor and to keep the avocado from turning brown.
That’s it! Cheap, delicious guacamole. I was craving guacamole in the worst way for weeks before Jess taught me how to make it. It’s so expensive at restaurants and this way is just as good.
We filled our tacos with Organic Cajun Rice & Beans, Salsa, Guac, and Frank’s Red Hot.
I had corn and a couple chips on the side.
Sorry for all the repeat dinners lately. Our kitchen is lacking in the food department and we need to go grocery shopping very, very soon.
Dessert was the last piece of the blueberry shower cake from last weekend. I didn’t take a picture because you’ve seen it a billion times already.
Today, Jeff and I are going to his friend’s wedding. Can’t wait! I love weddings! I’ll take tons of pics. I’m not sure if I’ll be back to post tonight. The wedding is at 4, so I’m not going to be home until late.
Gosh, don’t these people know that my bedtime is 8:45? Sheesh! 🙂
