I <3 Summer Produce

Is anybody else ridiculously happy that it’s summer? Aside from the warm weather and countless outdoor activities, my favorite thing about summer is the seasonal fruits and veggies. Today was full of ’em.

We’ve already discussed my blueberry obsession, so it should come as no surprise that the whole wheat blueberry pancake that I made for myself this morning was more blueberry than it was pancake.

I threw together a bulk mix of the dry ingredients for my go-to pancake batter so I can just whip it out and add eggs and milk whenever Jeff and I want pancakes. (Note: I only use the batter part of this recipe. Not that I don’t think the PB and Coconut Swirl idea is awesome. It is, I’ve tried it! I just like plain pancakes better)

When I broke down the recipe to make one pancake, I realized that it called for 1/4 of an egg. How the heck do I do that? I sort of just guessed and scrambled up the leftovers. The finished product was very tasty so I must have done something right!

I inhaled the pancake after getting back from an upper body and abs class at the gym. I used 6 lb free weights for the majority of the class and felt really strong! Afterward, I hopped on the treadmill and walked on an incline for 30 minutes. Gotta tone the booty. 🙂

Lunch today consisted of a leftover veggie burger from yesterday’s BBQ heated on the George Foreman Grill. I topped my burger with tomato and sauteed red onions. I also roasted zucchini, summer squash, and potatoes in the oven at 400° for ten minutes.

I ate my “burger” on an Arnold Sandwich Thin. It was a very nutritious and summery lunch.

For dinner, Jeff and I decided to try out Buitoni Whole Wheat Four Cheese Ravioli.

I received a coupon for a free package a couple weeks ago from the Foodbuzz Tastemaker Program. There are a variety of different kinds of Buitoni pastas and sauces but I had little to choose from at the grocery store I went to, so I ended up with the whole wheat four cheese. I would have loved to try the Wild Mushroom Agnolotti. I don’t even like mushrooms but it sounded interesting. Unfortunately, I had to choose from what was available at my local grocery store.

While the ravioli was cooking, I got the sauce ready.

I love Muir Glen! All of their sauces are so good!

My plate:I had more squash and zucchini with dinner. I also steamed some baby carrots and Jeff made corn on the cob.

Verdict: I did not like the four cheese ravioli. I couldn’t taste the cheese most of the time and I think I would have enjoyed the ravioli more if it had more of a filling. I will not be buying the four cheese kind again. I may try a different variety, though.  The rest of my dinner was fabulous. How could summer veggies not be?

Dinner concluded perfectly with a small piece of blueberry cake leftover from Saturday.

Oh man! So good.

Now, I’m off to stuff my face with popcorn and watch The Hangover with Jeff. Love that movie!

Stressful Days Call For Awesome Workouts & Food

Hi guys!! Sorry this post is so late tonight!  I had a very long day between work, errands, and the gym. I went to leave for work this morning and found that one of my tires was extremely low. Turns out I have a slow leak. 🙁  This called for an iced coffee from Dunkin Donuts

My breakfast was fun! I mixed 1/2 cup of Vanilla Almond Special K with 1/4 cup of Kashi Oat Flakes with Blueberry Clusters and topped it with almonds, blueberries, and skim milk

Kashi sent me a coupon to try a product for free. I can’t wait to pick something out! I love Kashi!

Work was very busy. I barely had time to stop and have a snack. I  finally managed at around 10:00.

I scarfed down a  hard boiled egg which kept me going till lunchtime. Lunch was amazing after spending 30 minutes trying to un-jam the copier. I finally sat down at about 12:30 to eat leftover Veggie Quesadillas from last night

Let me tell you, Quesadillas do not reheat well. These were mushy and greasy and not even half as good as last night. Oh well!

After lunch, I ran around the office for another 3 hours and  then ate some fruit at 4:00

After work, I did some errands for my mom and then headed to the gym. I snacked on half of a Chocolate Brownie Z Bar before my workout.

I did 60 minutes on the crossramp elliptical (6 miles) and 2 sets of bicep curls (20 reps) . Then I stretched, ate the other half of my Z Bar, and drove to my parent’s house. I watched Friends and Seinfeld on the elliptical. I love being able to workout and watch TV at the same time!

Dinner was an Egg & Zucchini Sandwich

What I used:

  • 2 eggs
  • Zucchini
  • Small amount of Pepper Jack Cheese
  • Basil
  • Black Pepper
  • Hot Sauce

I scrambled the eggs with all the ingredients and put it all on an Toasted Arnold Select Multi Grain Sandwich Thin. I had Blue Corn Tortilla Chips with Mango Peach Salsa on the side.

This sandwich was just what I needed after a long day. It was so good! Try it!

Dessert was a couple blocks of 85% Dark Chocolate

I love the bitterness of this chocolate.

Now I am just relaxing and waiting for my Aunt and Uncle to get here. They flew in from California tonight and they are staying at my parent’s house for the remainder of the week. Every time I see them I want to move to California.
