At the beginning of 2010, I stopped eating meat and never looked back. In January, my boyfriend, Jeff, and I decided to go meat-free for one month. We called it Vegetarian February. I stopped eating meat on January 12, 2010. It has been a life-changing experience and I couldn’t be happier.
Here are a few posts that tracked the process:

Am glad I stumbled across your blog! My husband is a veggie; so I more or less stopped eating meat when we moved in together five years ago. He is actually the worst vegetarian in the world – who ever heard of a vegetarian who doesn’t like mushrooms or tomatoes?! Anyway, just wanted to say that I basically don’t miss it at all. So good luck!
Good luck!! I’ve been a vegetarian for so long that I can’t even think of any tips. It’s so second nature to me!
Here’s one: if there something you’re craving, you can usually recreate it well enough with a veggie item (and not just fake meats). If you’re craving BBQ pork, for example, experiment with BBQ sauce on veggies, tofu, beans..
